A classic highball is one of the simplest cocktails there is: spirit and a mixer, served tall over ice. This non-alcoholic cocktail follows that refreshing template, but with a little extra lift.
Tenneyson Black Ginger brings bold peppery heat and earthy, herbal depth; ginger beer adds spice and bubbles; and a touch of lemon juice and ginger syrup rounds the drink into a brighter, more expressive non-alcoholic highball. A few dashes of our Aromatic bitters sharpen the finish and keep the drink planted firmly in cocktail territory—not merely a sweet ginger mocktail. It’s refreshing, zesty, and easy to make, perfect for slow sipping any time of day.
This recipe was perfected using Tenneyson Black Ginger—you're welcome to swap another alcoholic or non-alcoholic spirit instead, but it will change the character of the drink.
Bright, zippy, and ginger-forward, this easy-drinking highball features Tenneyson.

3-4 oz ginger beer

Recipe Note
WHY THIS RECIPE WORKS Classic highballs succeed because they’re simple and refreshing. This version stays true to that template but adds dimension: ginger shows up in four forms—Tenneyson Black Ginger, ginger syrup, ginger beer, and a ginger note in our Aromatic bitters—making the flavor layered, not flat. Lemon juice provides acidity for lift, keeping the drink crisp and bright. GINGER BEER VS. CLUB SODA Ginger beer creates a spicier profile with a sharpness that encourages slower sipping, but for a lighter (and less sweet) version that’s great for daytime drinking, try using sparkling water instead. Either way, the drink stays balanced and refreshing. ABOUT TENNEYSON BLACK GINGER Unlike most non-alcoholic spirits designed to mimic gin, whiskey, or tequila, Tenneyson is entirely its own thing. This botanical spirit is herbal, earthy, and intensely spiced, with notes of black pepper, ginger, and citrus. It gives this highball the bite and body that simple mocktails struggle to deliver. COCKTAIL BITTERS IN NON-ALCOHOLIC DRINKS Cocktail bitters provide depth and balance, rounding out sweet and sour flavors while adding bite. Since All The Bitter is completely 0% ABV (unlike traditional bitters, which are around 45% alcohol), you can use as much as you like to dial in flavor and complexity without affecting the ABV of your drink.
