WHY THIS DRINK WORKS
The Easy Does It draws inspiration from two classic cocktails: the Mojito and the Caipirinha. Both rely on fresh lime and a sugar but take slightly different approaches—one built on muddled mint and lime juice (Mojito), the other on whole lime wedges that bring in both juice and the subtle bitter oils and flavor of the peel (Caipirinha). Traditionally, both are made with sugar cane spirits (rum and cachaça, respectively).
In this version, we combine those techniques to create a non-alcoholic cocktail that feels just as complete as its classic counterparts. Muddled lime wedges add depth and a touch of bitterness, mint adds herbal lift, and Herb Garden bitters layer in notes of rosemary and eucalyptus. Paired with a botanical 0% ABV spirit like Aplós Ease, it’s a balanced, easy-drinking option that's herbal, refreshing, and low-calorie—clocking in at just 35 calories per serving.
ABOUT APLÓS EASE
Aplós Ease is a non-alcoholic spirit designed to mimic the structure and complexity of traditional gin, but without tasting like any standard gin—making it an ideal option for highballs, sours, or even as a unique alcohol-free replacement for white rum. With notes of cucumber, basil, and yuzu, it complements the fresh citrus and herbal elements in this recipe without overpowering them. More than just great tasting, Aplós Ease is loaded with L-theanine, magnesium, and lion’s mane mushroom—which add a calming, mood-enhancing element to the drink.
A NOTE ON DILUTION
Non-alcoholic cocktails can easily become overdiluted, so it’s important to manage how much water is added to the drink while shaking. One simple trick: keep your non-alcoholic spirits in the fridge so they’re chilled before making the drink. Starting cold means your ice melts more slowly, preserving both flavor and concentration. Use solid, high-quality ice, and avoid small or melting pieces that will quickly dilute the drink.
COCKTAIL BITTERS IN MOCKTAIL RECIPES
Cocktail bitters provide depth and balance, rounding out sweet and sour flavors while adding bite. Since All The Bitter is completely 0% ABV (unlike traditional bitters, which are around 45% alcohol), you can use as much as you like to dial in flavor without affecting the ABV of your drink.
