The Rosso Spritz is our take on the Aperol Spritz—bright, bittersweet, and begging to be enjoyed on the patio—but designed for non-alcoholic spirits. Instead of Aperol, we use Giffard Aperitif Sirop, a bitter orange liqueur alternative with remarkable intensity and texture. It delivers all of the spritz flavor without the alcohol, giving this non-alcoholic cocktail the structure it needs to taste like the real thing.
Note that any bitter orange aperitif or bittersweet liqueur will work in this format—Wilderton Bittersweet, Ghia, Pathfinder, Ritual Aperitif, Wilfred’s, Lyre’s Italian Spritz, etc. Sparkling wine (alcoholic or non-alcoholic) adds lift and effervescence, while a splash of club soda is optional: include it for a lighter, more refreshing non-alcoholic spritz, or skip it entirely for a bolder, more intensely flavored drink.
A few dashes of All The Bitter Orange Cardamom bitters brighten everything and tie the citrus together, resulting in a non-alcoholic spritz that’s crisp, vibrant, and unmistakably spritz-y—no Aperol required.

Ingredients
2 oz Giffard Aperitif Sirop
3 oz sparkling wine (alc or non-alc)
1 oz club soda (optional)
3 dashes ATB Orange Cardamom Bitters
Directions
Add all ingredients to a wine glass with ice and stir.
For a lighter, more refreshing drink, top with club soda.
Garnish with an orange slice.

NON-ALCOHOLIC APEROL OPTIONS There are plenty of excellent non-alc aperitifs on the market, each with its own personality. Giffard Aperitif Sirop is our top choice when you want something closest to Campari, and it works beautifully in a spritz. For a less-bitter option with warm clove and rosemary notes, reach for Wilfred’s. For something intensely bitter and herbaceous with a grapefruit edge, Wilderton Bittersweet Aperitivo is fantastic. Ghia brings ginger and tart fruit for a more modern, Mediterranean take, while Lyre’s Italian Spritz delivers a classic non-alcoholic Aperol profile that fits seamlessly into this drink.
SPARKLING WINE VS. CLUB SODA The sparkling wine is doing most of the work in this non-alcoholic spritz—adding bubbles, flavor, and that crisp, slightly acidic structure found in white wines. Club soda is optional: add an ounce for a lighter, more sessionable drink, or skip it if you want a stronger, more intensely flavored non-alcoholic spritz.
USING BITTERS IN NON-ALCOHOLIC DRINKS Cocktail bitters provide depth and balance, rounding out sweet and sour flavors while adding bite. Since All The Bitter is completely 0% ABV (unlike traditional bitters, which are around 45% alcohol), you can use as much as you like to dial in flavor and complexity without affecting the ABV of your drink.
