Garden Mojito

A drink that's perfect as-is, the Mojito nevertheless inspires countless variations. In this booze-free version we ditch the rum for Seedlip Garden 108, double down on that those grassy, vegetal flavors with a thyme syrup, and add a few dashes of our Orange bitters for bright citrus and spice. A refreshingly herbal non-alcoholic spin on the classic, this has "patio pounder" written all over it.

Note that other herbal non-alcoholic spirits could work here in place of Seedlip. Try this same cocktail with Wilderton Lustre for an herbal + floral variation, or Pentire Adrift for a spin that's inspired by coastal herbs.

This grassy, herbal spin on a Mojito will leave you feeling like spring has sprung.

Ingredients

• 4-6 mint leaves

• 3/4 ounce thyme simple syrup

• 3/4 ounce lime juice, fresh

• 2 1/2 ounces Seedlip Garden 108

• 3 dashes All The Bitter Orange bitters

• 2-3 ounces soda water (to top)

Directions

1. Lightly muddle mint with thyme simple syrup (recipe below) and lime juice in a cocktail shaker.

2. Add Seedlip Garden, orange bitters, ice, and shake until well chilled.

3. Strain into a highball or Collins glass with fresh ice.

4. Garnish with fresh mint and a lime wheel.

Recipe Note

THYME SIMPLE SYRUP
Combine 1 cup of water with 1 cup of white sugar in small sauce pan. Add 6-8 sprigs of fresh thyme (or rosemary if that's handy). Bring to a light simmer for 10 minutes, let cool, strain, and bottle. Syrup will last in the fridge for at least a month.

MAKE IT MINDFULLY LOW ALCOHOL
This refreshing, herbal cocktail wouldn't be mad if you used a bit of regular rum. Try 1 ounce of white rum along with 1.5 ounces of Seedlip for a patio pounder that's not too heady.
